Too Many Items

This is definitely a much-needed modification. One of the most important you will come across. It gives the player a bar on the right side of the inventory with every item. When an item is clicked, it will automatically add a stack of 64 of that item to the players' inventory.

InvEdit

This is not so much a mod as it is a program. It is an application that you open your maps with and then edit your inventory. It includes all current items. You can even make the items unlimited.
